"If you can’t see the ocean, you shouldn’t order seafood." – Wag who got food poisoning from shrimp off a Vegas buffet.

Embracing the desert and seafood sounds like a contradiction, but modern day transportation means the best restaurants get fresh fish. Emeril’s or McCormick’s are worth the trouble any time of day or day of week.

BAM! Kick it up a notch! It’s Cajun-style food, so it’s going to be spicy. Order the soup, order the gumbo, devour the bread, you can’t go wrong here. The gumbo is always a special spicy treat that is the best of New Orleans come to life. I  love the New Orleans Barbecue Shrimp, sopping up the leftover gravy with a fresh biscuit. They also serve non-fish items, so you’re not taking a big chance with entertaining guests here. My only complaint is trying to get a table without reservations beforehand. Come early and beat the crowd.

McCormick & Schmicks’ – 335 Hughes Center Drive

OK, it’s a national chain, but it’s a QUALITY national chain that has impressed the locals with their sincerity to seafood. Tucked away off the strip on the corner of Paradise and Flamingo, McCormick & Schmicks’ presents a daily menu listing the latest and greatest catches and serving combinations. And where else can you get a blend of iced tea and lemonade? This is the place to get your seafood smooth.
